This study developed a synthesis of Ch-g-PAA and Ch-g-PMA Antibacterial and Antifungal Superabsorben Materials based on Chitosan from shrimp waste by enzymatic hydrolysis and copolymerization method. Synthesis is done through the stages of deacetylation of chitin from shrimp waste, enzymatic hydrolysis using papain and copolymerization.using acrylic acid and methacrylic acid with Ferrous Ammonium Sulphate (FAS) as initiator. Characterization which was conducted on chitosan products include moisture content, ash content, degree of deacetylation, molecular weight (Mw), viscosity, solubility, water bond capacity (WBC) and fat bond capacity (FBC). Whereas the characterization of chitosan products yields by hydrolysis include molecular weight and degree of deacetylation. Characterization of chemical structure using FTIR, surface morphology by SEM, and thermal properties by TGA-DTA. Test of antibacterial and antifungal activity using the diffusion method against gram-positive bacteria Staphylococcus aureus, gram-negative bacteria Escherechia Coli and Candida Albicans fungus.

From the research that has been done, it can be concluded: 1) Having successfully obtained the product of chitosan, chitosan hydrolyzate, and materials superabsorben Ch-g-PAA and Ch-g-PMA from shrimp waste, 2) the resulting chitosan product having sufficient physical properties well with the degree of deacetylation of 82.72% and average molecular weight of 376.930 kDa. 3) From the aspect of chemical structure, the product of chitosan, chitosan hydrolyzate, Ch-g-PAA and Ch-g-PMA has been proved from FTIR analysis. 4) Material superabsorben Ch-g-PAA and Ch-g-PMA began experiencing thermal decomposition at a temperature of 210 oC and 215 oC. 5) From the aspect of the surface morphology, material superabsorben Ch-g-PAA and Ch-g-PMA has a homogeneous surface morphology, less dense and porous. 6) Superabsorben Ch-g-PAA and Ch-g-PMA materials has antibacterial and antifungal activity with strong category.
